A cheesy quiche that omits the crust but adds sausage and asparagus. Friends or relatives won't even notice the veggie sausage, egg substitute or low-fat cheese, making this a low-cal treat that tastes sinful.
Makes 6 servings
Ingredients:
Cooking spray 2 cups cholesterol-free egg product 4 frozen meatless breakfast links, cut into 1/2-inch slices 10 fresh asparagus spears, trimmed, cut into 1/2-inch lengths 1/2 cup 1% cottage cheese 1/2 cup shredded, reduced-fat mild cheddar cheese 1/3 cup finely chopped onion 1 T Dijon mustard
Preheat oven to 350 degrees F. Spray 9-inch pie plate with cooking spray. Mix all ingredients until well blended; pour into prepared pie plate. Bake 40 to 45 minutes or until center is puffy and top is golden brown.
