
Chef Paul Stellato has been cooking since he was 15 years old. In just a few weeks, he'll be venturing out of the states for the first time…to do what he does best, from a kitchen in London.
"This is one of the biggest things that has ever happened to me," says Stellato.
He will join seven other Gulf Coast chefs in London to serve Gulf seafood to team USA. Stellato recalls the day he learned of the opportunity of cooking in London. "A representative of BP was here a couple of Saturday mornings ago," explains Stellato. "She walked in the door and explained why she was here and of course, I was really excited and the rest was just a whirlwind."
In an effort to try and promote the Gulf coast, BP will present the 'Spirit of the Gulf' to Team USA. Stellato is one of eight chefs from Alabama, Louisiana, Mississippi, and Florida that will prepare their own dishes in London.
"They're actually taking my recipe and my seafood," says Stellato. "We're packing it here and then shipping it over to London and I'll be preparing it there and serving it to the guests."
Stellato is the chef at Firefly in Panama City Beach. He is one of two chefs representing Florida on the behalf of the Gulf Coast in London. Stellato will serve his very own grouper dish during a luncheon and dinner at the closing ceremony.
The games kick off in a little over two weeks.
