Yule Logs with Chef Derryck

Pastry Chef Derryck Adams visited News 13 This Morning on Wednesday to share a holiday Yule Log Recipe:

Swiss rolls

  • 1 lb sugar
  • 12 oz flour
  • 1 oz baking powder
  • 8 eggs
  • 12 oz butter
  • 1 cup of milk
  • Mix sugar, flour, and baking powder
  • Add eggs gradually
  • Then add butter to the mix and milk shortly afterwards.
  • Bake for 5-7 minutes at 425 degrees

Butter Cream

  • ½ lb of egg whites
  • 1 lb of sugar
  • 1 ½ butter
  • Cook the sugar into a soft ball
  • Whip the egg whites until it is fluffy
  • Add the sugar to the egg whites and beat it until it is nice and cold.
  • Then add the butter and it is ready

Roll the Swiss rolls with the butter cream and then decorate it. 


Chef Adams is an internationally acclaimed pastry chef who has won Gold Medals in several international pastry competitions.  He also won the Chocolate Creations Recipe Contest in 2007, with his Cappuccino Chocolate Delight.  

Originally from Sri Lanka, Chef Adams currently resides in Destin where he practices his passion for making wedding cakes, and gourmet pastries.
