My Best Friend's Kitchen - Christmas Quiche (3)

Kathie Riley and Chef Mike, from My Best Friend's Kitchen visited News 13 This Morning on Wednesday.  They were here to share a recipe for a Christmas quiche.

Makes 2 –9" Deep Dish Quiches 


  • 2 –9" deep dish frozen pie crusts
  • Filling Ingredients: Ham, bacon, sausage, shrimp, onion, mushrooms, spinach, diced tomatoes
  • 2  cups grated cheese
  • Custard:
    • 8 large eggs
    • 2 ½ cups half and half
    • 1 tsp BFS


  • Preheat oven to 350 degrees
  • Prick crust with fork – bake 10 – 12 minutes until slightly brown
  • Make custard mix - mix together eggs and half and half and BFS and lightly whisk
  • Place filling ingredients in frozen pie crusts
  • Sprinkle cheese on top of filling
  • Pour custard mix over filling, dividing between the two

To cook:

  • Bake for 45 – 60 minutes until crust is golden and custard is set
  • Allow to rest 5 minutes before cutting
