My Best Friend's Kitchen Halloween Party Recipes

The staff at My Best Friend's Kitchen stopped by the News 13 studios to teach the crew how to make easy, Halloween treats.  Below are the recipes that were demonstrated on the show:

Cheese Ball Monster

Ingredients:

  • 1 store bought cheese ball
  • 2 – 8 oz packages whipped cream cheese
  • Tortilla chips
  • 1 sweet gherkin
  • 8 – pimento stuffed olives
  • 1 bell pepper, cut into strips and 6 small triangles
  • 3 cups shredded purple cabbage
  • Toothpicks
  • Assorted crackers and vegetables for dipping
     

Directions:

  • Place 3 pieces of waxed paper around the edges of a serving plate, leaving open space in the center.
  • Place the cheese in the center of the platter so some of it is directly on the platter, but the edges are on the waxed paper to keep the platter clean while you decorate the goblin
  • In a medium bowl stir whipped cream cheese until totally smooth
  • With a spatula, spread the whipped cream cheese over the head – it doesn't have to be totally smooth
  • Press two chips into the sides of the cheese ball to form the ears
  • Skewer the gherkin with a toothpick and attach it to the center of the head to make a nose
  • Press the pimento stuffed olives into the head to form eyes
  • Use bell pepper strips to make eyebrows and mouth
  • Pull the pimento out of the remaining olives to make them look like scary toenails then press them into the bottom of the head to form the toes
  • Gently pull away the waxed paper
  • Press the cabbage into the top of the head to make hair
  • Serve with crackers and assorted vegetables

Spider Seven Layer Dip

Ingredients:

  • 1 can refried beans
    • 1 Tbsp. chili powder
    • ½ tsp. ground cumin
  • 1 cup prepared guacamole
  • 1 cup  sour cream (in a squirt bottle)
  • 2 cups chopped romaine or iceberg lettuce
  • 1 cup  Shredded Cheddar Cheese
  • 3  green onions, sliced
  • 1/3 cup  sliced black olives
  • tomato, chopped
    • Mix beans, chili powder and cumin; spread onto bottom of small platter or pizza pan, leaving a few inches around the outside for the lettuce mix
    • Top with layer of guacamole
    • Make three circles on guacamole with sour cream then working from center out use end of knife or spoon to pull sour cream to outside to make spider web design
    • Decorate outside with lettuce, cheese, onions, chopped tomatoes and black olives
    • Finish with plastic spider in the middle of the ‘web'
    • REFRIGERATE several hours – serve with your favorite tortilla chips

Ghost Cupcakes 

Ingredients:

  • 12 chocolate cupcakes
  • 1 can chocolate frosting
  • 1 can white frosting
  • 24 mini chocolate chips

Directions:

  • Place chocolate frosting in medium microwaveable bowl; microwave on high 10 seconds
  • Stir; microwave in 10 second intervals or just until slightly melted (alternately use dipping chocolate)
  • Working with one at a time, hold cupcake upside down and dip top into melted frosting or chocolate
  • Tilt cupcake to let excess frosting drip off
  • Let cupcakes stand until set
  • Place white frosting in pastry bag with large round tip or in Ziploc with 1 inch cut off one corner of bag
  • Pipe ghost shape onto each cupcake
  • Add chocolate chips for eyes

 

Chocolate Covered Strawberry Ghosts

Ingredients:

  • 24 large fresh strawberries
  • 8 ounces white dipping chocolate
  • 1/4 cup semi-sweet chocolate chips

Directions:

  • Prepare a baking sheet by lining it with waxed paper.
  • Wash the strawberries and pat them dry. Make sure they're truly dry and don't have any wet patches, otherwise you'll have trouble dipping them.
  • Melt the chocolate in the microwave, stirring after every 30 seconds until it is smooth and fluid..
  • Hold a strawberry by the stem and dip it in the chocolate until it is almost entirely covered.
  • With excess chocolate on berry place it on the prepared baking sheet pulling the chocolate to make a ghost like shape on the paper
  • Repeat the process until all of the strawberries are covered with white chocolate.
  • While chocolate is still wet press two chocolate chips into each berry to make eyes
  • Let sit at room temperature until chocolate is hardened for about 5 minutes.
  • Ghost Strawberries are best eaten the day they are made. Store them in the refrigerator until serving.

Halloween Snack Mix

 

  • 8 cups popcorn, popped
  • 2 cups pretzel sticks'
  • 1 cup mixed nuts
  • 1 cup candy corn
  • ½ cup M & M's
  • 1 cup chocolate Chex cereal

 

Mix all together…it looks so festive and can be combined with other candies for different holidays.
